Ram Ladoo (deep fried balls of moong dal)

It is one of the street food items. It's the simple deep fried balls made of moong dal and chana dal batter, garnished with the tangy tamarind chutney and green coriander chutney, grated radish and chopped coriander leaves.

Ingredients :
3/4 cup Yellow Moong Dal
1/4 cup Chana Dal
1 inch ginger
2 green chili
1 tsp jeera
a pinch hing (asafetida)
a pinch baking soda
1/2 tsp salt
Oil for frying
Coriander Chutney
Tamarind Chutney
Amchur Powder for sprinkle
Chaat Masala for sprinkle
Salt for sprinkle
Radish juliennes

Method :
Soak both the dals for at least 4 hours.
Drain the water and keep for rest for 5 minutes.
In a blender, add the dals along with the ginger & chili blend it all together till it makes a smooth batter. Add water only if required.
Transfer the blended batter in a big bowl. Add the cumin seeds, salt, baking soda, hing and some coriander leaves and whisk the batter. Whisk the batter till it is light and frothy.
In a kadai, heat oil for frying. either using your hand or a spoon start dropping one by one in the oil. The balls puff up while frying so don't put more than a spoonful.
Fry the pakoras on medium heat till golden brown. Remove the fried pakoras on a tissue paper to drain the excess oil.
For serving, keep 4-5 pakoras on a plate, top it with the green coriander chutney, tamarind chutney, chopped coriander leaves, grated radish.
Sprinkle the chaat masala, amchur and salt.
