Fruit Cake (Tutti Frutti Cake)

This fruit cake unlike the one made for Christmas, is very easy to make. It's a pound cake which has a mix of Tutti Frutti (small jelly type fruit bits made from papaya). It is a very popular tea time snack in India.

After soaking the fruits for Christmas I was left with some Tutti Frutti's so thought to try and make those fruit cakes which I used to have as a child. Sharing below a recipe I had success using. For those who want to use egg can follow the recipe as below or those who want to replace it, use curd as a substitute.

Tip : Please make sure all the ingredients are of room temperature and not cold at all.


Ingredients :

  • 100 grams all purpose flour

  • 100 grams powdered sugar

  • 100 grams butter

  • 100 grams tutti frutti

  • 2 eggs or 1/2 cup curd

  • 1/2 tsp baking powder

  • 1 tsp vanilla essence

  • 1 tsp rose essence

  • 1 tbsp flour extra

Method :

  • Preheat the oven for 10 minutes on 180°C. Dust the tutti fruitti with 1 tablespoon flour well and set aside. This will keep them from sinking while baking.

  • In a bowl, beat the softened butter either by hand or using a hand blender on medium speed.

  • Sieve the powdered sugar and then add half at a time and beat it slowly till it all mixes well and the color changes to pale white. The mixture should be fluffy and airy.

  • Add 1 egg and then whisk till it gets mixed well before adding the next egg. If you are adding the curd instead, add it in one go and mix them all well till it incorporates well. Add vanilla essence and rose essence to the mixture and whisk again.

  • Once all is mixed well, add the flour dusted tutti fruittis and fold it in the batter. Avoid overmixing the batter. Pour the batter in the greased cake tin. As my cake tin was bigger in size, so I used a aluminum foil to divide the tin and used an oven proof bowl which fits inside the tin to back the foil.

  • Bake the cake in the preheated oven on 180°C for 30-35 minutes. To check, insert the toothpick in the middle of the cake, if comes out clean without any crumbs, it is time to take it out of oven. Let it cool for some time. Serve it as a tea time snack.
