Vanilla cake (no egg, no dairy)

This is an eggless recipe I tried. The recipe also has no dairy used in it. The cake's texture will be dense and moist. The cake is covered in Non-Dairy whipped cream. I found this lovely brand AWAL Premium Non-Dairy Whipping Cream. I found it whips better in this kind of hot weather than the dairy version.

Ingredients :

  • 1 & 1/2 cup all purpose flour

  • 1 cup sugar

  • 1 tsp baking soda

  • 1/2 tsp salt

  • 1 tsp vinegar (white)

  • 5 tbsp canola oil

  • 1 & 1/2 vanilla essence

  • 1 cup water (r0om temperature)

Tools used :

  • 6" inch cake pan

  • butter/ parchment paper

  • 1 spatula

Method :

  • Preheat your oven 180°C/ 350°C for 10 minutes.

  • Take two bowls; in one mix all the dry ingredients and another mix all wet ingredients.

  • Add the wet to the bowl of dry ingredients and using a spatula fold and mix them well.

  • Pour the batter in a 6''inch cake pan and bake the cake for 25-30 minutes or till the toothpick inserted in the middle comes out clean.

  • Let the cake cool completely before frosting the cake.

I frosted the cake with colored whipped cream.


Sprinkle Variation : For making a Sprinkle Cake, add 1/4 cup Sprinkles to the cake batter and mix once before baking it.
