Kids does not like to eat vegetables so this is a sauce which hides the vegetables from their eyes. She loves to have pasta in the smooth sauce. So I like to make this pasta sauce so as she can eat some vegetables without knowing.

This is my style of the famous Marinara sauce.

I have already shared my pizza sauce recipe which can also be used with pasta.

Ingredients :

  • 2 medium ripe tomatoes

  • 3-4 cloves of garlic, chopped in thin round shape

  • 1/2 medium sized onion, chopped in stripes

  • 1/2 red bell pepper, chopped roughly

  • 1/2 carrot, chopped in the thin coin shapes

  • 3 tbsp olive oil

  • 1 tbsp of dried basil or fresh basil, finely chopped

  • Salt to taste

Method :

  • Make the cross on the base of tomatoes and boil them till they become soft. Remove the skin and Puree them in the blender.

  • In a pan heat two tablespoons of olive oil and add half of the chopped garlic cloves. Sauté for a minute and then add the chopped onions, bell peppers and carrots.

  • Add salt to taste and sauté for 4-5 minutes, till the vegetables start to change color. Remove from the flame and let it cool.

  • Now blend these vegetables in the blender.

  • In the same pan, again heat one tablespoon of olive oil. Add the remaining chopped garlic cloves and sauté for a minute.

  • Add both the pureed vegetables and tomatoes. and mix well. Add the finely chopped basil or one tablespoon of dried basil to the sauce.

  • Put it on low heat and simmer the sauce. Let it boil till it starts to thicken. Check the taste for salt and the spiciness as required. If required add red chilli flakes and freshly ground black pepper
