Toast Sandwich (with Potato filling)

It is another of the famous street food but a hit snack and also a good finger breakfast for kids. It is a mix of vegetables like potato, capsicum, onion, cucumber, tomato, paneer, etc. along with masalas. Along with that mint chutney, tamarind chutney and tomato ketchup adds to the flavor.

Ingredients :
8 slices Bread (white/ brown/ multigrain etc.)
1 Boiled potato
1 Capsicum slices
1 Onion slices
1 Tomato slices
1 Carrot slices
1 Cucumber slices
1/4 tsp Turmeric powder
1/2 tsp red chili powder
1/2 tsp chaat masala
1/2 garam masala
1 tsp salt
Chopped coriander leaves
Green chutney
Tamarind chutney or Tomato Ketchup
Butter or ghee
Method :
In a bowl mash the boiled potatoes.
Add turmeric powder, red chili powder, chaat masala, salt, garam masala and coriander leaves.
Take three bread slices, spread green chutney on it. Spread the potato masala on top of it.
Put the slices of onion, capsicum, carrot, tomato and cucumber on top of it.
Sprinkle it with chaat masala, red chili powder.
On the rest 3 slices spread tomato ketchup or tamarind chutney and use it to cover the bread with vegetables.
In a small bowl mix chaat masala and red chili powder.
Spread a thin layer of butter or ghee over both sides of the bread and sprinkle the masala mixture on top of it and place it on the sandwich maker, grill or on the heated pan. Toast until turns golden brown and crispy.
Cut it into pieces and serve it hot with ketchup.
Variations :
Add paneer cubes - Fry them till golden brown then grate it. Add mashed potato along with salt, red chili and chaat masala and mix them well.
Add cheese - Add the grated cheese on the top of the potato mixture. Once the sandwich is done cover it with more grated cheese.
